So many 18th century recipes use suet as an important ingredient, yet for many in the United States, suet can be difficult to find. It really needs to have pure kidney fat for it to be considered true suet. Unfortunately, if you ask your butcher for suet you’ll often end up with hard muscle fat instead, which is simply a poor substitute. We searched far and wide for a domestic source of refined all-kidney-fat beef suet tallow. Boy, did we strike it rich! Fatworks Pure Tallow is premium suet, made from 100% grass-fed cattle. If you can’t find raw kidney-fat suet locally, or if you have neither the time nor the inclination to mess with preparing it, Fatworks Premium Tallow is an excellent option for you. It comes in a 14-oz. jar. If you intend to take it to an event, we recommend warming it up to liquid state, and pouring it into a bread pan or similar container to solidify. May be stored in the pantry or the refrigerator. This will turn rock hard if refrigerated. Can be returned to a spoonable state by leaving the jar at room temp, giving it a short hot water bath, or microwaving. Tallow is naturally shelf stable for years.
